GREEN PAPAYA ANALYSIS

GREEN PAPAYA ANALYSIS

Analysis of dehydrated green papaya show that it contains less than 10% moisture, about 8% protein which are mainly the enzymes (enzymes are one form of protein), about 70% carbohydrates (pectin and fruit sugar), and 5% crude fiber. In 100 grams of dried green papaya, there are 1,950 mg of potassium, which is useful in the human system to balance the sodium, nearly 2000 I.U. of provitamin A, which helps maintain human night vision, and about 445 mg of magnesium, a useful trace element for the human system. Therefore, green papaya is a good source of the two digestive enzymes (papain and chymopapain), complex carbohydrates potassium, magnesium and Vitamin A.  (Interestingly, a ripe papaya has more Vitamin C, about 80 mg /100 gram of pulp, than in a green papaya, about 20 mg/100 grams of pulp.
